Cheesy Chilli Omelette

Add some zing to your breakfast omelette with these Asian flavours. Its no secret I love eating and cooking Asian food, and I was taught to master the Asian cuisine by Kylie Kwong herself. I worked in Neil Perrys Wockpool in Sydney and that’s where my love affair with Asian cooking started to boil. Its a complex cuisine, but once you know a few golden rules its easy to master.
Seasoning is captured with sweet and sour, and its all about the balance of flavours. Fish sauce( salty) balanced with palm sugar ( sweet ).
Fresh herbs are a must! A little chilli hit is always welcome.
Textures feature heavily Asian cooking , and it’s all about the crunch, or the silkiness , this comes with cooking techniques, steaming,( for soft silky texture and frying for crunch crispy textures). I believe its all what you add to the final dish.I added crispy onions to this omelette which gives the dish a wonderful tasty crunch.

Serves 1
Ingredients:
3 eggs
1 tsp olive oil
50g buffalo mozzarella cheese, torn into pieces
½ cup coriander sprigs, plus extra to serve
1 cup bean sprouts, trimmed
1 kaffir lime leaf, very finely sliced
1 red chilli, sliced
crispy onions to serve
kecap manis to serve
1 Crack eggs into a medium sized bowl and whisk with a fork till combined. Heat oil in a 20 cm non stick frypan over medium high heat. Add eggs and cook for 30 seconds –1 minute, using a spatula to push the eggs from one side of the pan to the other, allowing the eggs to cook underneath.
2 Place the mozzarella down the center of the omelette, add a few coriander sprigs. Fold over one side of the omelette to cover the cheese. Fold over again to completely enclose.
3 Slide onto a plate and top with bean sprouts, coriander, kaffir limes, chill and crispy onions. Drizzle with kecap manis.
Sizzle tip– its easier to make this omelette in a small frypan. But if you are cooking for a crowd you can double the eggs and use a large frypan, it may just take you a couple of flips to fold over the omelette.
Sizzle sub– this would be delicious with some BBQ pork, or shredded beef. The list is endless for your choice of fillings. Try chopped spinach, asparagus, roasted tomatoes, or crab meat.
Once you have mastered the folding for this omelette, its easy to create lots of delicious fillings for your breakfast.Perfect for a quick and easy dinner or snack also.
